PUMPKIN Risotto

This vegan, creamy, and healthy roasted pumpkin risotto is the perfect Winter or Fall dish. It's easy to make and it tastes delicious. You're going to love it!e made in just 35 minutes.

INGREDIENTS

Dry white wine

Nutritional yeast

Bake pumpkin dices for 20 minutes

Prepare the onions and garlic.

Stir-fry the onions until translucent, and then add the garlic.

Add the risotto rice, stir until lightly toasted.

Add then add wine, and stir until completely absorbed.

Add half of the pumpkin dice (save some for garnishing)

Stir in the stock, little by little, stirring frequently.

Add the nutritional yeast.

Smash some of the pumpkin, so it contributes to the creaminess of the risotto and leave some dice whole.

 Stir in the fresh sage and grate some nutmeg (optional).
