Creamy Sun-Dried

Tomato Risotto

This creamy and delicious risotto can be made with staple pantry ingredients

Dried tomatoes

Carnarolli rice

Garlic

Onion

INGREDIENTS

Dry white wine

Olive oil and basil

Prepare the vegetable stock.

Prepare the onions and garlic.

Stir-fry the onions until translucent, and then add the garlic.

Add the risotto rice, stir until lightly toasted.

Add then add wine, and stir until completely absorbed.

With a colander, skim the hydrated chopped dried tomatoes from the simmering vegetable stock and add them to the rice.

Stir in the stock, little by little, stirring frequently, and then add the tomato paste.

Keep adding more veggie broth, 1/2 cup at a time. Add more as soon as the rice absorbs it.

09.

On minute ten, add nutritional yeast or (homemade vegan parmesan), followed by the fresh basil.

10.

Garnish and serve.
