– Portobello mushrooms – Dried tomatoes – Onion  – Garlic – Celery  – Vegan parmesan cheese – Dried tarragon leaves – Fresh basil leaves –Parsley leaves – Salt and pepper

Cook Time: 25 Min

Preheat the oven 


Preheat the oven at 350 °F 


with parchment paper and place the mushrooms stalk side up on the baking sheet. Season with salt and pepper and optionally drizzle over a little olive oil.

Line a baking sheet


Place the baking sheet into the oven and roast for about 15 minutes or until the mushrooms begin to soften.

Bake mushrooms


Make stuffing

Sauté chopped, onion, garlic, celery, and dried tomato. Add vegan parmesan cheese and dried Tarragon. Remove from heat and add fresh basil and parsley.

Pile up the filling 

Top mushroom caps and top with shredded vegan mozzarella cheese or vegan parmesan cheese.



Or until the mushrooms are tender.

Bake for 10 mins
