    This Green Beans, Potatoes, and Sausage casserole is the perfect Thanksgiving side dish or a delicious breakfast, as it makes a complete meal! It's hearty and packed with flavor. It uses simple ingredients and requires minimal hands-on time!

    Friends, the time of year to make a cozy and nostalgic meal while eating many servings shouldn't be a problem. For us, that’s sausage green bean potato casserole – a dish my mom always made for my siblings and me growing up.

    It’s simple, savory, and healthy because there are veggies; although we have sausages, they are the not-too-bad kind since we use veggie sausages.

    This was one of those side dishes my mom served as a main dish and used it to ensure we got more veggies into our diets.

    But as kids, we couldn't resist anything that was topped with sausages at the time, and who doesn't love green beans and potatoes?

    This sausage green bean casserole was inspired by our roasted garlic and rosemary potato casserole on this site and pairs well with a delicious nut roast and cranberry sauce.

    🧾 Ingredients

    Simple ingredients, big flavor as this green beans recipe is deliciously seasoned with everyday spices.

    • Fresh Green Beans: These beauties add a delightful crunch and a pop of color to the casserole, all while giving you a dose of fiber and essential nutrients like Vitamin K. Plus, they're in season most of the year—score!
    • Vegan Smoked Sausage: For that hearty, smoky flavor we all crave without animal products. It brings protein and spice to the dish, making it a balanced meal.
    • Russet Potatoes: Perfect for soaking up flavors and giving the casserole a comforting, starchy base. They're also packed with potassium and vitamin C.
    • Garlic Cloves: The ultimate flavor booster, garlic adds aromatic depth that makes everything taste gourmet. It also comes with the added bonus of potential health benefits, like antioxidants.
    • Italian Herbs: These aromatic spices bring the taste of Italy right into your kitchen. Plus, herbs like oregano and basil have shown some anti-inflammatory properties, so you're spicing up your life in more ways than one.
    • Extra Virgin Olive Oil: It's the silky thread that weaves the dish together, providing richness and facilitating even cooking. Also, it's a good source of monounsaturated fats, making your heart do a little happy dance.

    Substitutions

    • Russet potatoes - instead of potatoes, you can use sweet potatoes for a change. You can also use red potatoes.
    • Green beans - using frozen green beans is OK. Just thaw and drain before mixing them with the potatoes.
    • Olive oil - feel free to use other vegetable oil with a high smoking point, like grapeseed oil or peanut oil.

    🍽 Equipment

    You can use a pan sheet or a ceramic casserole to make the sausage or green beans casserole.

    🔪 Instructions

    Preheat the oven to 400° F (200 °C).

    Remove the tops from the green beans.

    Step 1: Cooking the sausages according to the package instructions. We used a skillet.

    slice the cooked sausages into medium chunks.

    Step 2: Then, chop each one into 6 large slices.

    Step 3: Pop the potatoes and add green beans into a large mixing bowl.

    Step 4: Pour over the olive oil, and add potatoes and the Italian herbs.

    stir well until the potatoes and green beans are well coated.

    Step 5: Then mix everything well until evenly coated.

    Tip the potatoes and green beans into a large casserole dish.

    Step 6: Tip the green beans and potatoes into a large casserole dish or a prepared baking dish with parchment paper.

    Step 7: Spread the garlic cloves evenly and cook in the oven for 30 minutes.

    Step 8: Remove from the oven, and add sausage; then put it back in the oven for 10 minutes and cover with aluminum foil.

    Hint: After removing it from the oven after the first 30 minutes, taste a potato and see if it needs any adjustments like salt and black pepper. You can even sprinkle it with onion or garlic powder to intensify the flavors.

    You can garnish the sausage green beans with thyme sprigs and sprinkle vegan parmesan cheese right before serving.

    💡 Top tip

    To ensure the potatoes are cooked evenly, cut them into equal sizes, and if making a large batch, use a larger baking sheet so all the vegetables have enough room.

    📖 Variations

    • Spicy - Add red pepper flakes to the Italian seasoning to make a spicy version.
    • Deluxe - add a creamy vegan sauce or an arugula pesto next to the potato casserole for an extra kick of deliciousness. A sun-dried tomato pesto is also an excellent option for adding zing to the dish.
    • Mustard - we love having smoked sausage with Dijon mustard, so when we serve this dish, we most likely bring mustard to the table.

    This dish can be prepared as a skillet meal. You can check out a non-vegan version (easily veganized, as it uses chicken broth and meat sausages, that you can simply change for vegetable broth and vegan sausages.

    Serve this potato recipe as a healthy weekday meal or a side dish for your end-of-year celebrations.

    If you have this for brunch, I suggest having it with a vegan instant-pot jambalaya so you can use any leftover sausages and make a full meal.

    • Freezer – store in an airtight container or bag for up to 3 months.

    ❓ FAQ

    is green bean casserole gluten-free?

    Yes, as long as the other components in the casserole are also gluten-free. Use gluten-free, vegan sausages to ensure you keep the casserole GF.

    How long should you cook green beans?

    There is no one definitive answer to this question. Some factors to consider include the type of green beans, the size of the green beans, and how you like them cooked.
    Generally speaking, smaller green beans will cook faster than larger ones. So if you're using thin green beans, they may only need a few minutes in boiling water or steaming. If you're using thicker or waxier green beans, they may need up to 10 minutes or more.
    As for how "cooked" you want your green beans, that's a matter of personal preference. Some people like them barely cooked - with a slight crunch still remaining - while others prefer them cooked until soft. Experiment and see what you like best!

    Can I use canned green beans for this casserole?

    Yes, you can, but we suggest baking the potatoes in the oven or an air fryer, tossing the green beans in a large frying pan, then adding the cooked sausages, and folding with the baked potatoes just right before serving.
    Just remember that using beans that have not been boiled preserves more of their nutrients. (source)

    Ingredients
     
     

    • 2 lb potatoes
    • 4 vegan sausages (beyond meat sausages) see recipe notes for substitute
    • 11 oz green beans
    • 3 tablespoons olive oil
    • 8 cloves garlic whole
    • 1 ½ tablespoon Italian herbs
    • Salt and black pepper to taste

    Optional

    • 4 sprigs thyme fresh sprigs, or rosemary

    Directions
     

    • Preheat the oven to 400° F (200° C) - gas mark 6.
    • Start by cooking the sausages according to the package instructions, then chop each into large slices.
    • Pop the potatoes and green beans into a large mixing bowl, pour over the olive oil, add the Italian herbs and then mix everything together well.
    • Add the potatoes and green beans into a large casserole dish, then evenly add the garlic cloves and bake for 30 minutes.
    • Add the sliced sausages and put them in the oven for 10 minutes more, or until the potatoes are cooked and tender.
    • Serve immediately.
